Flat Out Pizzas

You know those nights when you are running the kids around for after school activities, and you only have a small window of time for dinner and you really don't want to hit the drive-thru again, but instead want to make a frugal, healthy meal in minutes? Since that is the dream of every working mom out there you raise the white flag and try not to cringe as you hand your kids their meal in a box.
Sorry for the ramble...I tend to get dramatic when I feel busy and overwhelmed and underfed. :)

This isn't some ground-breaking recipe or anything, but it sure has made me and my family happy on many busy nights...and with the addition of a few healthier ingredients, it's about as healthy as you can get for pizza. My hubby was just saying last night how much he enjoys them.

So here is my little fast/frugal/healthy recipe for pizza for a busy night. Or on a night where you are craving naughty pizza!

First get yourself some Flat Out Wraps. They come in many varieties and are not only whole grain, but low in calories too! Of course you need some pizza sauce, (leftover spaghetti sauce works really good too!) your choice of cheese, (leftover taco cheese and meat work really good too!) and whatever else personifies a good pizza to you.


I keep frozen peppers and pineapple on hand just for these pizzas. Turkey pepperoni is a must!



First I get my veggies, pineapple and jalapenos going with a little coconut oil. You are basically just heating these through, but you can get a little color on them if you work with them a bit.



Get out your Flat Out Wraps and get some pizza sauce on them. I like a lot as you can see.



The pizza on the right is my daughter's. She likes pepperoni ONLY. I like lots of stuff on mine.



What I love about these is you don't have to use very much cheese at all. If you use the Kraft cheese with a touch of Philadelphia in it, they do melt a little nicer.



I like to top mine off with some hot red pepper!




This is 5 minutes in a 450 degree oven. Yummy right?




Throw some fresh fruit on your plate or a quick side salad and dinner is done! Because of the fiber in these, one will really fill you up and will kick that pizza craving right out of ya.

Gourmet Breakfast on the GO option 2

A while ago I posted about breakfast on the go that doesn't include a two bite bar of some kind. When you are a working mom, it's so hard to take care of yourself and eat those fabulous healthy breakfasts that every magazine tells you is imperative to include in your day. What I hate about that the most is when you fail to do so and have a "I have to grab something fast" moment, you start your day off feeling like you've already broke the cardinal "healthy lifestyle" rule thus starting your day off making you feel like a complete failure.

I am forever trying to find solutions to combat this problem which leads me to part two in my breakfast on the go series. (I think I can call it a series now since I also wrote a lunch on-the-go post too!)

Have you ever stopped at McDonald's and grabbed a breakfast sandwich? Or maybe even Subway for a "healthier" version? Both can be pretty good, but also expensive and of course depending on what you choose, very UN-healthy. But goodness sakes sometimes if you want something hot and tasty it costs money and who has time to make a hot breakfast sandwich anyway?? Well, I do, and you can too if you get yourself one of these little egg pans! I bought mine years ago at the World Market for $4.99. It's held up all of these years and has gotten me out of the door with a hot breakfast sandwich in MINUTES. (I'm not sure if World Market still sells them, but the link I provided is from E-bay who had it even cheaper)

So here is what it looks like:


It's a tiny little thing.


Yes it makes a heart-shaped egg!



Grab some Pam, an egg, and a multi-grain English muffin!



Spray the pan with Pam.



Turn the burner on low-ish.



Go ahead and crack your egg add her to the pan.




I prefer to take a fork and pierce the yolk. I then add some salt & pepper. You could also whisk this in a bowl and add some veggies before you pour it in. This particular version is made to my taste.





Put the little lid back on the pan. Let it cook for 1-2 minutes. (I'm not a sunny side up girl, but it is possible in this pan if that is what you would prefer!)



When you lift up the lid as you can see here the egg is perfectly cooked.




Slide out the egg (thanks Pam!) on to your English muffin and garnish!

I like to toast my English muffin and add tomato and jalapeno. But you could add cheese, peppers, turkey bacon or sausage and still keep this pretty healthy and frugal. I make these in about the same time it takes to toast pop tarts in the toaster. I grab a paper towel and wrap it up to eat in my car just like I would if I ordered from a fast food window. These can also be great for a quick lunch on the weekend or even dinner!

Menu Plan Monday



Hello everyone! I've been gone for a bit but life gets hectic sometimes and you just have to roll with it. My sister-in-law and I had a garage sale for a few days in this wacky heat which of course took up a chunk of time. It was extremely successful so we were really happy we did it! I didn't take pictures like I should have, but I still might do a post of garage sale tips.

It's summer in Iowa which means we do a lot of grilling out and sweet corn and fresh veggies and fruit. I had my first tomato sandwich yesterday and it just screamed summer! I stopped at a local corner stand and bought some tomatoes, corn, and some peaches. So delicious!

Here is what I have lined up for my family this week. You might even see a few of these posted later. :)

Monday-Hamburgers on the grill garnished with tomatoes, onion, and lettuce. Oh and of course sweet corn on the cob and some delicious strawberries for dessert.

Tuesday-Cavatelli Sandwiches. My kids LOVE these! Served with fresh veggie salads.

Wednesday-Grilled Chicken, sweet corn on the cob and watermelon! (OH sweet watermelon how I love thee!)

Thursday-Flat Out Pizzas

Friday-spaghetti or my hubby will faint.

Saturday-Date Night! :)

Sunday-Crockpot BBQ Chicken, mac & cheese & more watermelon!

Where the heck have I been?

I'm so sorry for my absence lately. I just have a lot going on and can't give my sweet little blog the loving it deserves. I'm not stressing about it too much, I am a Chillmom after all. Life happens!
